Oysters have become a family favorite. My sister is the oyster connoisseur, and she got us all hooked on “Topsail Jewels” from our favorite Ghost Fleet Oyster Co.. They offer oyster tours off the coast of North Carolina, in the Hampstead area, so we went on one to learn about the oysters. Everything from how long they take to harvest, flavor profiles, sizes, how the different waters impact the flavor, and so much more! We ate unlimited oysters on that boat tour, and it was one of our favorite experiences to date.
We now do a bi-annual oyster shucking night. One during Christmas week, the other the week of Fourth of July. Since this is now a tradition in our family, we have been working on getting the mignonette sauce just right. We serve the oysters with the full array of toppings – horseradish, hot sauce, crackers, lemons and limes, and of course a good mignonette. People get crazy with their mignonette, but I like to it more traditional to get the true flavor of the oyster. I’ve tried different variations of vinegars with different ratios, and finally landed on the perfect one!
Some people like to make theirs the night before, but we prefer the shallots to have a nice crunch to them, so I make it 4 hours in advance. I think it adds a nice texture to the oysters, but that’s personal preference! I hope you enjoy this mignonette the next time you’re shucking oysters!
Here is the oyster shucking set we use and love! It’s really affordable.
Mignonette Sauce for Oysters
Ingredients
- 2 shallots, minced
- 1/3 cup white wine vinegar
- 1/3 red wine vinegar
- 1/4 champagne vinegar
- 1 1/2 tsp sugar
- 1/4 tsp salt
- pepper (optional)
Instructions
- Mince your shallots
- Add all of the ingredients into a bowl and mix
- Cover and refrigerate for 4 hours before serving. You can refrigerate for longer (or less time if you're in a pinch) but I like the shallots to have some crunch, so I think 4-6 hours is perfect.
